I’m not ready to pack up and call summer over yet, are you? We’re going to hang on a couple more weeks with some light summer-like recipes as part of our weekly meals; even though we are already feeling that transition to heartier fall meals.
Sunday: Seared-Chicken Salad with Green Beans, Almonds and Dried Cherries from marthastewart.com. We’re going to use Emily G’s Peach Marmalade in place of the apricot jam. This recipe is naturally gluten free.

Tuesday: Shrimp and Grits. I came across this recipe on a site that has gluten free meal plans as well, www.musingsofahousewife.com, so check out Jo-Lynne’s as well!
Wednesday: Tried and True Chicken Gruyere from musingsofahousewife.com. This just sounds amazing! This recipe is already gluten free. She suggests serving with mashed potatoes and green beans.

Friday: Grilled Island Chicken from www.melskitchencafe.com. Be sure to substitute gluten free soy sauce or tamari. Serve with simple steamed rice and broccoli.
Saturday: Grilled Mahi Mahi with Watermelon Pico de Gallo from delightglutenfree.com. This recipe is also naturally gluten free.
